Perennial greens are growing fast. Looking for something to stand out in a dish? Try these:

- Sorrel (lemony flavored)
- Valerian Greens (use in salads or for garnish)
- Wood sorrel

Red Amaranth
Red Amaranth can be used as a young green. Larger leaves make a vibrant contrast garnish as does the long flowers when in bloom. (Blooms later in the summer).
