Pansies (right photo) are large, pretty flowers that are edible and very versatile as a garish. Pansies come in multitude of different colors (Blue, Yellows, Purples, Reds, and more!)

Perennial greens are growing fast.  Looking for something to stand out in a dish?  Try these:
  • Amaranth, red (baby leaves)
  • Garlic Shoots or Bulbs
  • Rhubarb
  • Sorrel (lemony flavored)
  • Valerian Greens (use in salads or for garnish)
  • Wood sorrel

Red Amaranth

Red Amaranth can be used as a young green. Larger leaves make a vibrant contrast garnish as does the long flowers when in bloom. (Blooms later in the summer).
