All Day Beef Stew is comfort food for the Fall and Winter. It doesn’t get any easier to make a delicious meal to come home too at the end of the day. Pull all ingredients together in about 15 minutes in the morning and put in the crockpot.

3 lbs beef (stew beef or roast such as shoulder)
1 cup of red wine
3-4 cups of beef stock
4 tomatoes, peeled, seeded and chopped or 1 can tomatoes
4 tablespoons tomato paste
6 whole cloves
½ teaspoon black peppercorns
Several spring of fresh thyme
2 cloves of garlic – more is okay too!
8 small red potatoes or 4 large cut-up
1 lb of carrots, peeling and cut into sticks
1 onion chopped
8 juniper berries (optional)
sea salt & pepper

Marinate meat in red wine overnight.
Place all ingredients in a crockpot and cook on low for 8-10 hours or high 6 hrs.
Serve with fresh bread or rolls. Enjoy!
